Moët Impérial is produced in the heart of the Champagne region, harvested exclusively by hand, as the grapes used to make sparkling wine must be intact to prevent the juice from being affected by the air.
Moët & Chandon Brut Imperial champagne is only produced in good vintages. A secondary fermentation inside the bottles causes the wine to effervescent and completely changes its taste. Over the course of four years, a layer of yeast sediment gives the wine a toasty taste. After the yeast sediment has concentrated near the cork, the process of removing it takes place. By carefully placing the neck of the bottle in a supercooled salt solution, the sediment inside the bottle freezes into ice. Once removed, all that remains is to seal the bottle with a regular cork.
This champagne has been aged in contact with the sediment for as long as 4 years.
