A secondary fermentation inside the bottles causes the wine to effervescent and completely changes its taste. Over the course of four years, a layer of yeast sediment gives the wine a toasty taste. After the yeast sediment has concentrated near the cork, the process of removing it takes place. By carefully placing the neck of the bottle in a supercooled salt solution, the sediment inside the bottle freezes into ice.
